Natural energy bars

With my long runs getting longer, I’ve started to test different energy things to see what works best with my body and more importantly stomach.  I’m lucky in that most of the gels I’ve tried are okay (aside from their taste and texture - gag), but the bars I’ve tested all seem to make me feel ill and take too long to chew; eating while running isn’t easy or pretty.  Cue (Never Home)Maker and their recipe for marathon chunks.  They’re raw energy bars that I can make in five minutes, really tasty and the best part: went down like a treat on my last run! 

Here’s the recipe:

  • 1 cup dried, pitted apricots (I used figs and probably most any dried fruit will work)
  • 1 cup raw cashews (didn’t have them on hand so I subbed peanuts and almonds)
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons maple syrup
  • 1/3 cup raw sunflower seeds
  1. in a food processor, combine the apricots, cashews, peanut butter, vanilla, and maple syrup. (I did this in two halves so it would blend better in my food processor) 
  2. Then turn out the mixture into a medium bowl and fold in the sunflower seeds. You may wish to adjust the peanut butter and/or maple syrup to meet your desired consistency.
  3. Remove from bowl and press into an 8 x 8-inch foil-lined baking dish. Refrigerate overnight before cutting into chunks of desired size.
